New dishes will appear on the menu of Minsk schools after the spring holidays. This was reported to Minsk-News by Lyudmila Krupskaya, director of the School Catering Combine.
The School Catering Combine (KShP) develops two-week menus according to seasons. Right now it's spring. And from the start of the fourth academic quarter, children will be offered an updated menu.
Yes, syrniki and dumplings will be excluded from it. After surveying students in all schools, it became clear that while these dishes are liked by children, they already seem quite familiar and commonplace.
— Therefore, we offer children an alternative — nuggets with 'Kazka' (Fairy Tale) sauce," said L. Krupskaya.
Another new item is the 'Banzai' cutlet. It also consists of chicken fillet with added natural spices, such as garlic. The dish will be served in the shape of a heart.
— These items will be included in the menu for schoolchildren from grades 1-11," specifies L. Krupskaya. — The diet of middle and high school students will also be supplemented with chicken sausages in natural casing.
According to the interviewee, KShP daily tracks the amount of food waste remaining after meals. This allows them to analyze which dishes children like and which ones should be discontinued. Of course, how well portions are eaten also depends on the mealtime and the skill of the cooks.
— But there are general trends, and we note them. Firstly, children have missed meat dishes.
Therefore, we are bringing back chicken cutlets with cheese to the menu.
Secondly, we noticed that side dishes are less popular among children. The menu includes mashed potatoes, baked potato wedges, porridges — buckwheat and rice. There was also bulgur, which children didn't like very much. In the next two-week menu, we will replace it with another grain," noted L. Krupskaya.
Good news: pancakes will remain on the menu, for which the waste percentage is minimal and does not exceed 10%.
— Currently, students receive this dish with various fillings: cottage cheese, cherries, and from the new quarter, there will also be with apples and cinnamon. In the future, the question of introducing pancakes with ham and cheese is being worked out," specified the KShP director.
Among children's favorite dishes is tortilla with two fillings: cheese and egg, cheese and sausage product. And it will remain on the new menu.
— We conducted a tasting of chickpeas among schoolchildren. Children liked it, and we included it in the menu for spring health camps. This is a very healthy product with high protein content. We also have the idea to offer draniki (potato pancakes) to children in the future," shared L. Krupskaya.
